Para maior precis\u00e3o, sobretudo se recorrer \u00e0 salga a v\u00e1cuo (nesse caso pode juntar especiarias \u2013 as quantidades encontram-se na sec\u00e7\u00e3o seguinte), calcule a dura\u00e7\u00e3o atrav\u00e9s da f\u00f3rmula abaixo:<\/p>\n\n\n\n<p>Me\u00e7a o di\u00e2metro da pe\u00e7a em cent\u00edmetros, divida por dois para obter o raio e some 1. Exemplo: pe\u00e7a com 8 cm de di\u00e2metro \u2192 8\u00f72 = 4; 4+1 = 5, portanto 5 dias no frigor\u00edfico.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Salga a v\u00e1cuo e utiliza\u00e7\u00e3o de especiarias<\/h3>\n\n\n\n<p>Para a vers\u00e3o a v\u00e1cuo, que intensifica os sabores, prepare uma mistura de especiarias com 4,5 % de sal.<\/p>\n\n\n\n<p>Por cada quilo de carne:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>45 g de sal (fino ou grosso)<\/li>\n\n\n\n<li>22,5 g de a\u00e7\u00facar mascavado (pode reduzir entre 10 % e 50 % em rela\u00e7\u00e3o ao peso do sal)<\/li>\n\n\n\n<li>1 g de pimenta mo\u00edda e 1 g de bagas de zimbro mo\u00eddas<\/li>\n\n\n\n<li>0,5 g de mistura<\/li>\n\n\n\n<li>4 especiarias (mistura comercial)<\/li>\n\n\n\n<li>0,3 g de folhas de louro finamente picadas<\/li>\n<\/ul>\n\n\n\n<p>Esfregue a carne com a mistura, embale-a de imediato a v\u00e1cuo e coloque no frigor\u00edfico pelo per\u00edodo calculado. Durante a salga, massaje e rode o saco ocasionalmente para garantir que os aromas se distribuem de forma uniforme.<\/p>\n\n\n\n<p>Em alternativa, pode simplesmente acrescentar as especiarias ao sal
