Spoel ze daarna grondig om alle geurtjes te verwijderen.<\/p>\n\n\n\n<p><strong>Malen:<\/strong> Maal de ingredi\u00ebnten gelijkmatig voor een homogene structuur. Gebruik eerst de grove schijf en daarna de fijnste voor een zijdezachte vulling.<\/p>\n\n\n\n<p><strong>Vullen:<\/strong> Vul de darmen rustig en zonder luchtbellen; ze moeten stevig, maar nog wel soepel aanvoelen. Knijp en draai de worst op regelmatige afstanden zodat gelijke porties ontstaan.<\/p>\n\n\n\n<p><strong>Garen:<\/strong> Pocheer op lage temperatuur om de malsheid te bewaren. Houd het water constant tussen 70 en 75 \u00b0C; koken zou de boudin uitdrogen en korrelig maken.<\/p>\n\n\n\n<p><strong>Bewaren:<\/strong> Vacumeer de boudins om de houdbaarheid te verlengen: enkele weken in de koelkast of maandenlang in de vriezer.
