Deze charcuteriespecialiteit stak al snel de grens over en veroverde ook Corsica en delen van Zuid-Frankrijk.<\/p>\n\n\n\n<p>De naam zou teruggaan op het Latijnse woord <em>&#8216;copa&#8217;<\/em>, \u2018nek\u2019, een knipoog naar het gebruikte vleesdeel. Gaandeweg groeide coppa uit tot een onmisbaar onderdeel van de Italiaanse en Corsicaanse keuken, geprezen om zijn aromatische gelaagdheid en prominente plaats in de lokale eetcultuur.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tips voor een geslaagde huisgemaakte coppa<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Droogtijd<\/h3>\n\n\n\n<p>In het basisrecept vind je een eenvoudige methode om de zoutingstijd globaal in te schatten.<\/p>\n\n\n\n<p>Deze methode is doeltreffend en gemakkelijk. Wil je echter preciezer werken\u2014vooral bij vacu\u00fcmzouten, waarbij je meteen kunt kruiden (de exacte hoeveelheden staan hieronder)\u2014gebruik dan de volgende formule om de zoutingstijd te berekenen:<\/p>\n\n\n\n<p>Meet de diameter van het vlees in centimeters, deel die door twee (voor de straal) en tel daar 1 dag bij op. Een stuk van 8 cm diameter geeft: 8 \u00f7 2 = 4; 4 + 1 = 5, dus 5 dagen zouten in de koelkast.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Vacu\u00fcmmethode en kruidenselectie<\/h3>\n\n\n\n<p>Voor de vacu\u00fcmmethode \u2013 ideaal om de smaak optimaal te bewaren \u2013 maak je eerst een kruidenmix met 4,5 % zout.<\/p>\n\n\n\n<p>Per kilo vlees:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>45 g zout (fijn of grof)<\/li>\n\n\n\n<li>22,5 g rietsuiker (naar smaak te verminderen tot 10\u201350 % van het zoutgewicht)<\/li>\n\n\n\n<li>1 g gemalen peper\n1 g gemalen jeneverbessen<\/li>\n\n\n\n<li>0,5 g van dit mengsel<\/li>\n\n\n\n<li>4-kruidenmix (kant-en-klaar verkrijgbaar)<\/li>\n\n\n\n<li>0,3 g fijngehakte laurier<\/li>\n<\/ul>\n\n\n\n<p>Wrijf het vlees rondom in met de kruidemix en vacumeer het direct. Laat het pakket vervolgens het volgens de formule berekende aantal dagen in de koelkast liggen. Keer en masseer de zak af en toe zodat de smaken gelijkmatig intrekken.<\/p>\n\n\n\n<p>Je kunt uiteraard ook extra kruiden mengen door het grove zout van de \u2018simpele\u2019 methode, maar die
