Ga wel voor topkwaliteit, het liefst van lokaal gehouden kalveren. Dat proef je meteen.<\/p>\n\n\n\n<p><strong>De tomaten<\/strong>: Rillettes met tomaat? Klinkt misschien vreemd, maar geloof me: het is verrukkelijk. De tomaat overheerst niet, maar dankzij zijn natuurlijke glutamaat wordt het geheel veel smaakvoller.<\/p>\n\n\n\n<p>Mijn vrienden zijn in elk geval al om!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kalfsrillettes: zo serveer je ze<\/h2>\n\n\n\n<p>Het leuke aan rillettes is dat je er alle kanten mee op kunt. Laat het vlees \u00e9cht lang garen\u2014veel langer dan een <a href=\"https:\/\/www.charcuteriemaison.fr\/nl\/pate-de-campagne-met-cognac\/\">pat\u00e9 de campagne<\/a>. Zonder die langdurige bereiding krijg je nooit die zijdezachte structuur.<\/p>\n\n\n\n<p>Ten tweede: het zout. Je hoeft niet tot op de milligram af te wegen, zeker met alle groenten die we toevoegen, maar houd ongeveer 10 g zout per kilo vlees aan.
