In dit traditionele recept krijgt hij een nieuwe twist door de toevoeging van port, wat voor een subtiel zoete, verfijnde nuance zorgt.<\/p>\n\n\n\n<p>Hij is eenvoudig te maken, maar vereist wel wat geduld en precisie om de perfecte textuur en smaak te bereiken. Net als bij de <a href=\"https:\/\/www.charcuteriemaison.fr\/nl\/authentieke-elzasser-cervelas\/\">Elzasser cervelas<\/a> is de structuur van de vulling bepalend voor het eindresultaat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Herkomst van de witte pens<\/h2>\n\n\n\n<p>De <a href=\"https:\/\/www.charcuteriemaison.fr\/boudins\/\">witte pens<\/a> ontstond in Frankrijk, vooral in het noorden en oosten van het land. Traditioneel eet men hem tijdens de eindejaarsfeesten en hij kenmerkt zich door een bijzonder fijne, zachte textuur.<\/p>\n\n\n\n<p>Witte pens maak je doorgaans van varkensvlees, melk, eieren en verschillende kruiden, wat hem zijn karakteristieke lichte kleur geeft. Gebruik bij voorkeur verse, lokale producten.<\/p>\n\n\n\n<p><strong>Respecteer de temperaturen<\/strong>: Verwarm de melk met groenten en specerijen zonder deze te laten koken, zodat de smaken intact blijven. Gaar de pensen vervolgens op 78 \u00b0C voor een zachte, gelijkmatige bereiding.<\/p>\n\n\n\n<p><strong>Meng het mengsel grondig<\/strong>: Voeg melk en port aan het gehakte vlees toe en meng zorgvuldig tot een volledig homogeen geheel. Zo krijgt u een egale, aangename textuur.<\/p>\n\n\n\n<p><strong>Ga zorgvuldig om met de darmen<\/strong>: Spoel de varkensdarmen grondig voor gebruik en vul ze niet te stevig, zodat ze tijdens het garen niet barsten.<\/p>\n\n\n\n<p><strong>Houd het garen in de gaten<\/strong>: Volg de gaartijd nauwkeurig. Te lang garen maakt de pens droog; te kort garen zorgt ervoor dat hij uit elkaar valt bij het snijden.<\/p>\n\n\n\n<p><strong>Laat rusten<\/strong>: Koel de pensen na het garen in koud water en hang ze daarna op om goed uit te lekken.
