Het resultaat is boterzacht, sappig en bomvol smaak \u2013 ideaal bij de borrel, maar ook als garnituur bij warme gerechten of in een maaltijdsalade.<\/p>\n\n\n\n<p>Dit recept, dat eenvoud en verfijning perfect verenigt, is een culinair juweel waar de bewoners van Tours trots op zijn.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">De geschiedenis van de rillons<\/h2>\n\n\n\n<p>Op de boerderijen in de Touraine ontstonden de rillons als manier om het varken langer te kunnen bewaren. Na de slacht werd de buik in blokjes gesneden, van zwoerd ontdaan en langzaam in eigen vet gekonfijt. Tegenwoordig worden de rillons gekruid met tijm, laurier, versgemalen peper en soms een scheut witte wijn of marc. Zo krijgen ze een weelderig smaakpalet en een delicate textuur: lichtbruin aan de buitenkant, zacht ros\u00e9 vanbinnen.<\/p>\n\n\n\n<p>De verfijnde structuur van de rillons staat in contrast met die van de <strong>rillauds<\/strong> uit de Anjou, die hun zwoerd behouden en daarom steviger zijn. De onderlinge rivaliteit tussen de rillons uit Tours en de rillauds uit Angers groeide door de eeuwen heen uit tot een smakelijke twist tussen Touraine en Anjou.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tips voor perfecte zelfgemaakte rillons<\/h2>\n\n\n\n<p><strong>Kies kwaliteitsvlees<\/strong>: Gebruik een mooi gemarmerde varkensbuik met de juiste verhouding tussen mager
