De variatie is eindeloos, met bijvoorbeeld <a href=\"https:\/\/www.charcuteriemaison.fr\/nl\/boudin-blanc-met-eekhoorntjesbrood\/\">boudin blanc met eekhoorntjesbrood<\/a> of een stevige <a href=\"https:\/\/www.charcuteriemaison.fr\/nl\/authentieke-elzasser-cervelas\/\">cervelas<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Tips voor perfecte traditionele worsten<\/h2>\n\n\n\n<p><strong>Moet ik het mes en\/of een rooster terugplaatsen om de darm te vullen?<\/strong><\/p>\n\n\n\n<p>Wanneer je worsten vult met een vleesmolen met vulpijp, is het handig te weten of het mes en\/of het rooster erin moeten blijven. Bij veel modellen vanaf type 8 zit standaard een \u2018geleideschijf\u2019 die het mes tijdens het vullen vervangt. De schroef transporteert het vlees rechtstreeks naar de vultrechter. Dankzij de geleideschijf \u2013 of een speciale afstandsbus \u2013 blijft de schroef correct gepositioneerd en voorkomt hij ongewenst heen-en-weer bewegen.<\/p>\n\n\n\n<p>Beschikt je molen niet over zo\u2019n afstandsbus, plaats dan een rooster met grote gaten in combinatie met de geleideschijf. Zo blijft de schroef netjes op zijn plek. Maal het vlees tijdens het vullen bij voorkeur niet opnieuw: daarbij verliest het vocht en dus smaak. Moet je toch nog een keer malen, gebruik dan het grofste rooster om dat verlies tot een minimum te beperken.<\/p>\n\n\n\n<p><strong>Welk type zout moet ik gebruiken?<\/strong><\/p>\n\n\n\n<p>Gebruik bij voorkeur fijn keukenzout in plaats van grof zout of pekelzout, dat eerder voor pat\u00e9s bedoeld is.
