Disidrata leggermente la carne, intensificandone l\u2019aroma senza seccarla.<\/p>\n\n\n\n<p><strong>Zucchero di canna<\/strong>: abbinato al sale, bilancia la salagione, ammorbidisce la polpa e favorisce la formazione della pellicola protettiva indispensabile per un\u2019ottima presa di fumo.<\/p>\n\n\n\n<p><strong>Aneto<\/strong>: conferisce una nota fresca, leggermente aniciata, che si sposa alla perfezione con il salmone. Aggiunto gi\u00e0 in fase di salagione, profuma il pesce fin nel cuore.<\/p>\n\n\n\n<p><strong>Trucioli di legno di melo<\/strong>: la scelta del legno influisce molto sul sapore finale. Quelli di melo sprigionano un fumo dolce e fruttato, ideale per il salmone.
