Con il passare dei secoli, la coppa \u00e8 divenuta un pilastro della gastronomia italiana e corsa, apprezzata per la complessit\u00e0 aromatica e il ruolo centrale nelle tradizioni locali.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Consigli per una coppa casalinga perfetta<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Tempo di stagionatura<\/h3>\n\n\n\n<p>In questa ricetta proponiamo un metodo per calcolare, a grandi linee, il tempo di salagione.<\/p>\n\n\n\n<p>Il sistema funziona: \u00e8 semplice ed efficace. Se per\u00f2 desiderate maggiore precisione, soprattutto con la salagione sottovuoto (alla quale potete aggiungere le spezie; trovate le dosi qui sotto), calcolate il tempo di salagione con la formula seguente:<\/p>\n\n\n\n<p>Misurate il diametro della carne in centimetri, dividetelo per due per ricavare il raggio, quindi aggiungete 1. Esempio: diametro 8 cm \u2192 8\u00f72 = 4; 4 + 1 = 5, dunque 5 giorni in frigorifero.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Metodo sottovuoto e spezie<\/h3>\n\n\n\n<p>Con il sottovuoto, che esalta al massimo i sapori, preparate una miscela di spezie contenente il 4,5% di sale.<\/p>\n\n\n\n<p>Per ogni chilo di carne:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>45 g di sale (fino o grosso)<\/li>\n\n\n\n<li>22,5 g di zucchero di canna (potete ridurlo dal 10% al 50% del peso del sale)<\/li>\n\n\n\n<li>1 g di pepe macinato  \n1 g di bacche di ginepro tritate<\/li>\n\n\n\n<li>0,5 g di miscela quattro spezie<\/li>\n\n\n\n<li>quattro spezie (in commercio)<\/li>\n\n\n\n<li>0,3 g di foglie di alloro tritate<\/li>\n<\/ul>\n\n\n\n<p>Massaggiate brevemente la carne con la miscela, quindi sigillatela sottovuoto. Riponete in frigorifero per il periodo calcolato con la formula indicata. Durante la salagione, massaggiate e girate il sacchetto di tanto in tanto affinch\u00e9 le spezie si diffondano uniformemente.<\/p>\n\n\n\n<p>Naturalmente potete anche incorporare le spezie nel sale
