Con el tiempo, la coppa se ha convertido en un imprescindible de la gastronom\u00eda italiana y corsa, apreciada por su complejidad arom\u00e1tica y su lugar en las tradiciones culinarias locales.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Consejos para preparar con \u00e9xito tu coppa casera<\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Tiempo de secado<\/h3>\n\n\n\n<p>En esta receta proponemos un m\u00e9todo \u00aba grandes rasgos\u00bb para calcular el tiempo de salaz\u00f3n.<\/p>\n\n\n\n<p>Funciona, es sencillo y eficaz. Si prefieres un m\u00e9todo m\u00e1s preciso \u2014sobre todo al emplear salaz\u00f3n al vac\u00edo (en cuyo caso puedes a\u00f1adir especias; encontrar\u00e1s las cantidades en el apartado siguiente)\u2014, calcula el tiempo de salaz\u00f3n con la f\u00f3rmula que detallamos a continuaci\u00f3n:<\/p>\n\n\n\n<p>Mide el di\u00e1metro de la pieza en cent\u00edmetros, div\u00eddelo entre dos para obtener el radio y, despu\u00e9s, suma 1. Por ejemplo, para una pieza de 8 cm de di\u00e1metro: 8 \u00f7 2 = 4; 4 + 1 = 5. El resultado son 5 d\u00edas en la nevera.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">M\u00e9todo al vac\u00edo y uso de especias<\/h3>\n\n\n\n<p>Para el m\u00e9todo al vac\u00edo, que potencia al m\u00e1ximo los sabores, prepara una mezcla de especias con un 4,5 % de sal.<\/p>\n\n\n\n<p>Por cada kilo de carne:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>45 g de sal (fina o gruesa)<\/li>\n\n\n\n<li>22,5 g de az\u00facar moreno (puedes reducirlo entre un 10 % y un 50 % del peso de la sal)<\/li>\n\n\n\n<li>1 g de pimienta molida y 1 g de bayas de enebro molidas<\/li>\n\n\n\n<li>0,5 g de mezcla<\/li>\n\n\n\n<li>quatre \u00e9pices (disponible comercialmente)<\/li>\n\n\n\n<li>0,3 g de hojas de laurel picadas<\/li>\n<\/ul>\n\n\n\n<p>Frota la carne con la mezcla r\u00e1pidamente y envasala al vac\u00edo. Col\u00f3cala en la nevera durante el tiempo calculado con la f\u00f3rmula anterior. Durante el proceso de salaz\u00f3n, masajea y gira la bolsa de vez en cuando para que las especias penetren bien.<\/p>\n\n\n\n<p>Por supuesto, puedes limitarte a a\u00f1adir las especias a la sal
