Se elaboran con dados de panceta de cerdo confitados lentamente en su propia grasa. Perfumes de tomillo, laurel y pimienta, a los que en ocasiones se suma un chorrito de vino blanco o de marc, les aportan hoy una gran riqueza arom\u00e1tica. El resultado es una pieza de exterior ligeramente dorado y coraz\u00f3n a\u00fan rosado, de textura delicada.<\/p>\n\n\n\n<p>Su delicadeza contrasta con la de los <strong>rillauds<\/strong>, el equivalente angevino que se prepara con la corteza y ofrece una textura distinta. Con el paso de los siglos, la rivalidad entre los rillons de Tours y los rillauds de Angers se ha convertido en todo un duelo gastron\u00f3mico entre Turena y Anjou.<\/p>\n\n\n\n<h2
