La firma industrial Loste lanz\u00f3 un producto similar, el \u00abPav\u00e9 basque\u00bb, que explotaba la iconograf\u00eda vasca aun cuando se elaboraba con cerdo ajeno a la regi\u00f3n.<\/p>\n\n\n\n<p>Ante ello, la casa Mayt\u00e9 se vio obligada a defender no solo su creaci\u00f3n, sino la autenticidad de los productos vascos en general. \u00ab\u00bfPor qu\u00e9 no llamar a su salchich\u00f3n \u201cPav\u00e9 de la Haute-Loire\u201d?\u00bb, se preguntaba \u00c9ric Mayt\u00e9, reflejando la sensaci\u00f3n de expolio cultural.<\/p>\n\n\n\n<p>El conflicto puso sobre la mesa un problema mayor: la ausencia de protecci\u00f3n jur\u00eddica para la marca \u00abPays Basque\u00bb. Dales la vuelta con frecuencia, sobre todo los primeros d\u00edas, para asegurar un secado parejo.<\/li>\n\n\n\n<li><strong>Bodega climatizada<\/strong>: Una cava ventilada a 14 \u00b0C y 74 % de humedad relativa es una opci\u00f3n magn\u00edfica.<\/li>\n<\/ul>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Evita los errores de secado<\/strong><\/h4>\n\n\n\n<p>Una compresi\u00f3n insuficiente de los b\u00e9rets o una rejilla de malla demasiado fina pueden atrapar aire y dificultar el secado.
